Drawing inspiration from her extensive travels and local farmer’s markets, JUS Organic is the brainchild of Renee Dorski, a mother of two based in Atlantic Highlands and a former international model. “JUS Organic was designed with the intention of embracing and adding to the community,” says Dorski. The space features an open format, complete with a large community table and cozy nooks, all infused  with a bohemian vibe. Offerings are mindfully soured, including breads from NYC mainstay, Balthazar, while food is served on teakwood boards and furniture that Dorski brought back from Bali. The menu boasts a wide range of vegan, vegetarian and of course, organic options.

Dorski’s desire to open her own establishment stemmed from vivid memories of cooking in the kitchen with her grandmother, as well as preparing meals for herself and friends after adopting a vegetarian lifestyle at the age of 15. Her passion for food led her to work as a chef at yoga retreats and private events, all while simultaneously working as a massage therapist at the prestigious Mandarin Oriental in New York City for several years. Additionally, her  modeling career took Dorski all over the world, where she lived in New York, Los Angeles, Milan, London, Spain and France.

Having found a home base in New York City and then Brooklyn for over 12 years, Dorski met her husband Yoni Zilber. Zilber, a renowned tattoo artist with an international following and former owner of New York Adorned in NYC, also operated a private studio in the Atlantic Highlands. Traveling extensively to cater to his celebrity clientele, Renee and their two young daughters accompanied him to destinations such as Bali, Israel, Japan and Mexico, often staying for months at a time. Enamored by an 1800s Victorian home, the family decided to make Atlantic Highlands their permanent residence, immersing themselves in the local community. Additionally, Dorski showcases her musical talents by playing bass in an all-mom band known as Mamadrama.
